Broken Blender :(

Welp, I tried to avoid dairy and sugar, but thanks to KCACTF Region 2 volunteer work, I gleefully broke those resolutions. Lattes abound! Delicious, full-fat lattes!

And then my mother came to stay yesterday; 'twas her birthday. So I cooked up a big batched of yummy chicken enchiladas... with loads of cheese... and sour cream... and then of course I had to make a cake! Oh my, was it an excellent cake. Flourless, dark chocolate, full of sugar!

And the damned thing broke my $20 Hamilton Beach refurbished blender from Big Lots! Burnt the motor right out. No more hummus and baba ghanoush for me, I'm afraid, until it can be replaced. Clearly the gods are not smiling on this one.

So, it shall be store-bought hummus until I can purchase another blender.

But up for next week: more curry! Vegetable curry from the Moosewood Cooks Cook at Home Cookbook. On coconut rice. Am I excited or what? I'll be om nom nomming all week. And I've got some tilapia that'll be eating as well. Health food all around!

MDH, the foul tempter

I was going strong: yes, I allow myself some super dark chocolate bars (70% cacao and above), but no lattes. No cake. No cookies. No brownies. And then my friend MDH, who's staying the week, brought me a pan of homemade flourless brownies as a thank you present. He came in 15 min. ago. I've had two already. I'd like to blame this on PMS, but no. I accept full responsibility, for my name is Caitlin and I am a chocoholic. You know, though, I'm willing to accept this failure, eat the whole pan, and move on with my life.

On the other hand, I have become a socca master! Observe:



Yep, that' a plate of freshly made chickpea flat bread, another on the way. And my handy dandy can of bacon grease, 'cause you can't pour that shit down the drain.

Gee, why didn't I post the pic of my first socca? It was a complete disaster. Still tasty!

And for the record, the socca is awesome with baba ghanoush. I will be eating like a queen this week. The queen of Glutenfreedonia.

Let's get crackin'

To finally get started on my resolutions, I blew about $70 at the grocery store on Saturday. Alright, I don't know if "blew" was the right word. I got a crapload of veggies, which actually aren't that expensive, but had to stalk up on a few things like laundry detergent, tahini, and walnuts, all of which drove my grocery bill up way higher than expected. And I do get cage free eggs and bacon with no nitrites or nitrates, because A. they taste better and B. they're more healthy-- in that order.

So what am doing with my plethora of vegetables?

I'm making a curried red lentil and kale soup! I'll be having it for dinner while working KCACTF this week and cannot be more excited. It's freaking delicious, fast and healthy. The recipe comes from Living Without, "the magazine for people with allergies and food sensitivities." That's me! A super senior Celiac, unable to consume anything with wheat, barley, oats, and rye. And being diagnosed was honestly the best thing that ever happened to me: instead of being upset that I can't eat a donut, I am actually happy that I have a legitimate reason to avoid them. Because, let's face it: dieting sucks. But if eating unhealthy food, such as fast food, actually makes me physically ill, you bet I won't be eating it.

"No sandwiches?" you say. "What is Caitlin going to be eating this week during festival, especially considering she is essentially chained to her post, unable to leave to go home and boil a pot of rice pasta? Or whatever else she can eat."

For lunch I'll be having fresh vegetables with homemade baba ghanoush, again from Living Without. Not gonna lie, the main reason I made it was so I could say baba ghanoush. And I am particularly proud of how my baba ghanoush turned out. It's like a creamy hummus, but with eggplant instead of chickpeas. Now, the recipe I used called for roasted eggplant. I followed the instructions to a T, but soon found that roasting eggplant is difficult when your broiler doesn't work. So I turned the heat down to 350°, shut the oven and roasted 'em for about a half an hour. Surprisingly, they turned out pretty good. And I was able to speed up the process of baba ghanoushing by using my trusty blender. It's been sitting in my cupboard for a few months-- I bought it to make salsa verde from a recipe my host mother gave me in Mexico. But it also made a delicious baba ghanoush and has earned a spot on the counter where it is more readily accessible. Because next week I'm having homemade hummus!

Also, I'm going to be trying something new, a flatbread made from chickpea flour called socca. Yes, like the character from Avatar, the Last Airbender. Fingers crossed that it tastes good with baba ghanoush!

Why so Resolute?

Why is Caitlin resolute, do you ask? Well, (spoilers!) she really isn't.

But since many people think that the world is ending on December 21st, I figured this is the year to change. Or at least to take my New Years resolutions more seriously. Because these could be the last ones I ever make. LOL.

So, let's stop beating about the bush and see what exactly my resolutions are:

1. Eat more vegetables
2. Stand up straighter
3. Try to avoid dairy and refined sugars (with the exception of hard cheeses such as parmesan--I got a cheesemill for Christmas and want to use it!)
4. Break the latte habit
5. Be more organized
6. Be more responsible
7. Do homework and such ahead of time
8. Be a nicer person over all

Seem decent, don't they? Yeah, so far I'm failing most of them. Well, all of them except the one about lattes, and I'm kind of a latte fiend, so I'm proud of that.

"So," you say, "girlfriend's got resolutions. Go her. What's the point of this blog?"

Well, I would like this blog to be is a cooking/exercise/health/vent-center/et cetera thing. I have always intended to be a journal keeper but have failed. Epically, may I add. So hopefully having a public web log will motivate me to actually keep up with things. Dream big!
